What is everyone’s thoughts on this bad boy?

What’s the difference of just using a pizza pan from the dollar store? They have ones with holes and without?

There are a few variations of that diffuser out  there. Never used any of them so no idea however effective they are.  With a solid pan such as a pizza pan, you will not get any drippings on the coals.  Here's a couple.

Here's what I'm currently using. It's a Hunsaker knockoff.  Works very well. Flaps  angle can be easily adjusted if need be.

Sometimes i also  use a  heavy duty 18 1/4" stock pot lid.

I'm using round SS serving trays. Bought few of them for approx. $3 per piece. I'm really happy with them.

Do u notice a big difference from the water bowl?  Mine would be for easier clean up and more room for fuel.  I run the bowl empty

Not really, actually no difference besides one. It's much easier to clean than the water bowl. Besides this, you can use it also as a diffuser in a standard 22 kettle.

it's funny, first time I saw this I thought it was a turbine to fan the charcoal embers. the placement made me wonder about what kind of motor was being used, as it appeared it was below the fan and would be exposed to the intense heat.

where does one buy this knock-off?

I made a couple of them. Right side is 19.5" out of 14 gauge stainless.  Left is 16 gauge and it's 18.5" in diameter.
If you want the authentic turbine, then you can order it below.
