Stuffed Pork Chops

So had 4 decently sized pork chops and some stuffing leftover from yesterday. Marinaded the chops in Portillo’s house dressing (its similar to creamy Italian dressing) then stuffed them with the leftover stuffing. My wife brought home fresh carrots and celery from work. Had some golden potatoes so made a version of Hasselback potatoes and some chicken stock.

Looks good to me! Where the potatoes Laying in the liquid for the whole cook? How did that affect their texture if it all

@Travis Potatoes are about 1/8 of a inch above the broth/liquid covered about 30 minutes (kind of steaming them)  I then put them under the pork chops after I seared the chops for a few minutes on both sides. Potatoes came out perfectly! I took the pork off at 155 internal temperature and covered with tinfoil. Drained the broth and reserved some for the chops if needed. It wasn’t 😊

Next was the crescent rolls. Wife said “NO DO THEM IN THE HOUSE!” I said okay and did them on the grill. Turned out better then I hoped.

Thanks I’m working on my St. Patrick’s Day cook this week. I’m looking at Shepherds Pie to do I know I need to make Irish Stew, but want to try something I’ve never made also. Lol!
