First time having a Hebrew National with cherry wood smoke... OMG.  So good.  Sorry, no plating pic.  These were devoured and Beaux had one too.... Hottest Bud's been in my care.  He was staring to get a little darker as the temps rose to 350F.

This was just brown sugar and salt, keep it neutral so we can use leftovers for lots of different cuisines.

The heat deflector is a solo stove cover with a solo stove ring holding it up.  I don't have a solo stove but after doing research it seems like the perfect solution.  It is high quality stainless steel so it should last forever and I can catch all the drippings and maximize my smoking space.

Set it at 225 but it got hotter over night.  It was at 203 when I woke up at 7.  Wrapped it in foil and put it in a cooler.  It was around 140 at dinner time.  Had it with bao buns.  Was going to have pulled pork sandwiches tonight but the hurricane had other plans.  Luckily no damage but the power is out.

Chesapeake Weber

Burgers on the 18" Hunsaker plancha on the old WW.  Used some beef fat to season the plancha. Smelled so good 🤤.  Thunderstorms around us but only a few drops and a rainbow across the backyard.
