Inspirational from Chuds bbq.  So far, I’ve cooked an hour each side at 300.  Internal is about 180 after two hours.   Now I’m mopping with a mop sauce every 10 minutes.         Charcoal grate at bottom position with the baskets giving 3 extra inches.  Going to cook to slice temp around 190.  I don’t want to pull it.  The smell is unbelievable.
