Update - up at 7:30 this morning, WSM chugging along at 250ish, zero wind, gentle smoke wisping from the smoker and a quick spritz of 50/50 apple juice and apple cider vinegar.  I ain't wrapping these...

Cheddar-bacon-ranch chicken sandwiches on 12 grain, toasted over B&B lump charcoal with jalapeƱo kettle chips and an award winning beer. The last one got an award too.

First cook on the 26!

First attempt at KFC turned out pretty good! I didn't coat it as evenly as I should have so there was a spot or two that had some excess flour stuck on. Still definitely going to try this one again.
All in all I'd call it a successful experiment! And the honey butter sauce went great with it!

Friggen pork butts turned out really good.  15 hours in and wouldn't budge past 185F.  I ended up wrapping these stubborn SOBs and they turned out great lol.... Basement beans, Mac n cheese and mixed greens rounded out the dinner.  8 vac packs now in the freezer, good through spring....
