Simple, hot and fast... 6 hours smoke and 2 hour rest. Pulled pork sammie's.... Cherry wood and a fire dial. No water pan.

Looking awesome Gringo!  My sear went a little too far on our filet... went two minutes and should have done one or possibly 30 seconds.  Ah well, I was watching the scallops like a hawk - didn't want to over cook them.  Nice Friday night dinner...

This is my third cook on the new grill. It's hot here in central California near Fresno so the fire has been between 280 and 300 degrees. When it hit 300 I found some shade and moved it there. Now it's stable at 288. I know that's higher than recipes say so we'll see what happens. This was about 4 hours into the cook.

One of our favorites, CI seared Mahi-mahi... not on a Weber but what the heck I share all my cooks here.  Kellee had the idea to add umbrellas around the deck and I gotta say I like it.  She had fun in the swing while Beaux enjoyed a fresh oak stick.  Dinner was awesome.
