Marinade is simple, I've been using it for years.

We are looking forward to a few SGI beach cooks and just hanging with you guys in October. Yes, it will be a fun time on the island.

Did these two ways... the thighs in the front of the grill that are darker are spritzed with canola and have only It's Incredible seasoning on them - the way my wife likes them.  On the other thighs I pulled the skin back, seasoned lightly with It's Incredible underneath, placed the skin back in place, small spritz of canola, dip in Kentucky Kernel flour with a little everglades fish and chicken seasoning mixed in and on they went.  About 15 minutes into the cook if any flour is still white and dry I give it another little spritz of canola oil.  Not exactly KFC, but very close in flavor.  BTW, we find the flour and Everglades at our local grocery.  I just put the link in so you can see the product.

Did these last night, just a light coating of mustard, and an even dusting of SYM, SNS indirect at 400-450F. 20 minutes until skin gets crispy, then flip skin down for 10 minutes, then flip back to skin up for another 10 minutes and done!

Not battered, but the light mustard coating gives it a "naked" fried chicken texture that is hard to beat!
