Tri Tip sandwiches

Started with cooking a prime TriTip...


Sliced and chopped the leftovers...


Toasted some little sandwich rolls...


And fried some bacon...


Covered the bacon with extra sharp cheddar...This would make a pretty good sandwich...


But I piled on the beef...


And added more cheese...


In the house the rolls get mayo, lettuce, fermented onions, and roasted peppers...Oh yeah...Then a pile of meat and cheese...


And it's time to eat...

Anyway I figured it's about time I posted some pics...

Lacto-fermenting is something I've been playing with...It's the oldest form of food preservation known...No vinegar...The flavor is a little "sour" but not tart like vinegar or citrus...No heat is used so the onions are still crispy like fresh sliced onions...Also the in your face flavor of raw onions is toned down a bit...

Only drawback for me is it needs to be stored in the fridge after the ferment...Really cuts down on beer space... 8)

Just tried some fermented Jalapenos on a chili dog....All I gotta say is Hell Yeah!
