Took the Blues for a test drive
« on: October 28, 2018, 04:57:04 PM »
So I took the Blues on their Maiden voyage today. 8lb. Oven stuffer with carrots, potato's, and brussel sprouts underneath. The seal of ring to kettle is amazing. 1:20 minute cook until internal temp of 168. She held 450 the whole time perfectly. One of the best roti chickens I've done. The only thing I did different was poke holes in the skin all over with a skewer. Help to render the fate under skin allowing more basting and crispier skin. The color and LIGHT smoke flavor comes from the Apple wood chunk IMHO
Very cool it finished after dark.

It was spot on! One of the best dizzy chickens I've spun. There's a good amount of fat under the skin so the holes help push it out when rendering which bastes the chicken even more and the best tasting skin.
I didn't do anything else to it. Next time I plan on an 18 hour dry brine.
Try it out Fellas and let us know.

How did the potatoes and veggies come out for you colin?  Last time I spun a bird I had a pan underneath with carrots, onions and small cut up potatoes catching the drippings.  Cant recall what the total cook time was, but was very surprised to find my potatoes were barely even cooked!  Everything in that drip pan had a really smokey flavor too.  Much more than the chicken.  It was almost overpowering.
Its amazing how quickly one weber kettle turns into more than a dozen!  Always open to grabbing something interesting so let me know what you've got!
