Wings with homemade habanero sauce

A buddy brought me a bag of habaneros from his garden. I decided to make a habanero hot sauce. I surgically removed the seeds and veins and used this recipe. https://www.allrecipes.com/recipe/57326/bobs-habanero-hot-sauce-liquid-fire/

I used considerably less mustard and molasses but other than that followed it. I was shocked. 10 habaneros and it was medium heat at best. Absolutely fantastic flavor with the peaches. Probably the best I’ve ever made.

I grilled direct working the wings in and about for a half hour or better then moved to the outside edges for another 15. Much more work than indirect wings but well worth it.

I have to try this. I made wings yesterday and the skin was NOT crispy. I see I should be moving them to the center above the coals. Learning stuff left and right... and center! :)

“Sear and slide” as @travis would say is the only way to go imo. Or top grate of a wsm with no water pan.

You just dump a pile of coals in the center and spread them a little and keep working the wings in and out of the fire until you get the color you want then pile up around the sides to finish. Direct heat crisps the skin and adds great flavor with the fat dripping into the coals.

Vortex and other indirect methods can make delicious wings and I still use that method if I’m making a bunch of other food and can’t tend the grill, but if I’m able too, I much prefer the flavor and texture of direct.

@smoke freak. I’ve made bbq sauce and various mustard sauces but not pepper sauces. I loved this habanero!  A new rabbit hole to go down.  I’m looking forward to it.
