Memorial day tri-tip

Yesterday I fired up the performer and did a reverse seared tri-tip smoked with a little oak.  When it hit an internal temp of 125 I loosely wrapped in in foil so it could rest but not cook too much more.  It turned out excellent.







I meant to get more pictures but that got tough with all the kiddos running around. Hopefully everyone enjoyed their memorial day!!
