10 Pound Pork But

Put this on at 7:30 this morning and have been cooking between 250 and 275 degrees.  Water in the pan and apple and cherry wood chunks.  Surprisingly it is at 185 degrees at 3:30 and hopefully will be done for tonight's dinner.

6:00 pm and it is done.  Really thought it would take longer but it is at 203 degrees.

Looks amazing! That bark is incredible!! When I get bark like that, I always pick at it for "tastes" before shredding.  That usually means I pick off half of the bark for myself!!  Hope it tastes as good as it looks!

Thank you. I added some Head Country apple and habanero sauce when it was on my plate and that sauce really is good.
