Cooked a 8 lb. pork butt today and it turned out fantastic cooked indirect 275-300 until it hit 165 then I put in pan and covered in foil until it hit 208 and I let it rest for a hr. total cook time was 7 1/2 hrs. forgot to take pictures of plated but had sandwiches with coleslaw and baked beans.
Just on

165 temp
