2-2-1 is for baby backs. These were a higher grade of St. Louis spare rib I picked up from SaveMart.

You could do ribs like that in a kettle. Use a snake/fuse burn. Works very well.

Just be aware the size of your kettle 18/22/26, briquettes you use, and the desired temperature all play a role in how you build your "snake."

For lunch I will need begin to cook to 8 am aprox

For dinner I will begin to cook to 5pm aprox

Or I will not arrive in time  hahaha.
