I am sure this technique could be adapted to a regular 18.5.

That's the guy .....

Down in the lower right of his page, in"Categories".....it says "Jarhead's World"......

The blog fellow had him review a 26.75 & put together an instruction manual of sorts.........

That's MacEggs & I's buddy John.....Jarhead, from Smoke Ring.......guy's got more recipes conjured up & collected than you can shake a stick at......he can cook ANYTHING.........................come to think of it, he's got a complete set of  black Weber, except for 1880, I think.....should get him on over if he'd like to hang out..... ;D

He did a great job with the post - very informative.

Question - given aluminum is such a great conductor of heat, wouldn't this modification be somewhat unsafe due to high temperature and possibility of burning yourself?  Also, wouldn't the aluminum radiate more heat, thereby reducing cooking temperatures in the kettle?

Yeah, you dont want to touch the side of the tamale pot when she's going.  You will burn the piss out of yourself if you do.

Lets just say that the thermometer trim bezel conducts heat very well and that it is not recommended to touch it after the cooker has been going for 4 hours.  Ouch!
