Vortex wings: dust before or after cooking?

Friends:

I’ve been making wings with my vortex for about a year now and I finally looked at the instructions on the kosmos wing dust and I realize I’ve been cooking a LIE.

Kosmos says you’re supposed to put the dust on after cooking. I’ve been rubbing and then cooking.

I’m clearly going to have to try it both ways. Has anyone beat me to this and tried it both approaches?

You didn’t do it wrong.

Kosmo said in the live chat that he cooks his wings without any seasoning whatsoever (no salt or pepper), then seasons them with his dust after he pulls them off.

He also said...many people season during the cook to achieve the flavor they’re going for.

Try both ways and see which you prefer.

I ALWAYS season B4 the cook, then maybe a bit afterward with SnP.
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

I always do a dry brine of plain old kosher salt an hour or so before cooking. Then a SMALL amount of whatever rub right before they go on.
