The nice thing about going this route is you can make the grill grates to what ever height you want. Put some thought in to were you want them and what height in relation to the heat from the bottom.  It is way cheaper to get the smokey Joe then build from there vs.  a wsm 18. And a fun, easy build too.

She'll be fine once she tastes what you cook in there!

Or even better, you can do what we do and use the smoked pork or chicken...

in your tamales. [emoji6]

Just a quick FYI.  I've seen tamale pots that will fit on 18.5 and 22" cookers.  They run around $60 for the 22".

I paid $200 for a Smoke EZ.

@Yukonjim Dr. Freud would have a heyday with that design. ;)

@MauroBBQ That’s a cool little SJ you found. You’re gonna’ love the DIY MiniWSM. Mine gets way more use than I thought it would have. Throw up some picks of some discadas (spelling?) tacos!!! :)

Ha! Good to hear my spelling is in check. One of my middle school students (I’m a teacher in Colorado) promised to bring me in some discada tacos last year. He says it’s his favorite food, but he has yet to make good on his promise. I told him I’d trade his mom for some of my best gringo bbq recipes. :)
