What's are your thoughts on hanging ribs?
Pros and cons?
I'm debating weather to get a hanger to hang ribs on the Weber smokey mountain??

They're great! I really enjoy hanging them all the way through. They have a very nostalgic flavor that takes me back to my youth. I have been playing with a hybrid method of hanging and then foil wrapping on a grate.

Thats awesome! How long do you hang for? 3 hours the wrap?

Honestly I've found no cons . Ribs cook faster and more evenly with the heat 360 degrees around them. The flavor is outstanding. Last spares took 4 hours no wrap. Also , you can hang 10-12 racks in a 22.

Awesome man. You'll love it. I've hung chickens and a brisket too. You order a gateway?

I have to check my notes. I believe it is around two hours, wrap for on hour, then unwrapped with sauce for 20-30 minutes. Cook temp is 300.

I have only cooked spares with the hybrid method. Baby backs I usually do just like @wessonjb does...straight through.

Gateway is great and well built. I have the Weber one and sold my gateway to a member here. Gateway is a few inches shorter but still great

The advantage of the Gateway is you can rotate the rack on the tabs for a more "even" cooking (which you can't do with the Weber). Not sure it makes much of a difference though. Brian, I have said it before, and I'll say it again: those KH ribs are gorgeous! Best color ever.

Do the ribs ever break apart and fall to the coals?
