Versatility at its best! It’s like I’m just throwing meat at it! Starting out with a 3 lb Porchetta indirect with a drip pan to catch all that porky goodness to use on roasted potatoes, CompK in a whoretex with a chunk of apricot and some Apricot & Rosemary pellets in the AMT.
Then stuck some Grill Grates over the coals and grilled som Pork steaks seasoned with @CatskillSmokers Spicy Maple rub
Then grilled a scored Flat Iron
