First packer brisket of 2018

I managed to find my first prime brisket thanks to a friend with a Costco membership.  It went on the wsm at 3:30 am.  It’s cruising @250 F and in the stall @ 160 F IT. 

Stayed tuned.  Nothing like a brisket to liven up a cold Indiana morning.

That looks great. I have a Costco membership but have not tried a prime brisket yet. I’ve only made choice. I’m interested to know how you think it compared to choice.

In fact, the only briskets I have cooked are gfs choice.

Yes.  My WSM is on my front porch.  It’s closed on three sides and faces east, so I have great wind and weather protection.  Everything around it is brick and concrete, so low hazard risk.

A covered area would be great. There have been many times i haven’t used the wsm due to the threat of rain. Those days I use a kettle instead. They chug through the rain.

Agreed.  The wsm can deal with a light rain but not a heavier downpour.
