Pork shoulder defrost question from a Newbie.
« on: January 07, 2018, 10:18:22 PM »
Hello,
Planning on doing 1st pork shoulder on 22" weber on Thursday.
The internet says to defrost in fridge for 24hrs per 5 lbs. It says to do this on a rack to get it out of its juices. So is does this mean I should remove the shoulder from its plastic packaging? Or can I defrost in the pkg?

Thanks in advance, this kettle has been a lot of fun so far.

More sanitary to keep it  in the packaging. Just place it in a pan or bowl to keep water from dripping all over the fridge. It's completely fine if it gets fully defrosted 1-2 days before you plan to cook it.
