« on: November 18, 2017, 06:43:11 PM »
Deboned a whole chicken and seasoned it with Its Incredible. Stuffed with sautéed onions , mushrooms, spinach, red peppers and ricotta cheese. Smoked with RO lump and cherry wood on the WSM 18.

Some day, I'll attempt a de-bone. Need to up my knife game first.

My god, that guy is amazing. Literally, literally did not know that's how de boning was done. I would have butchered anything . My buddy is giving me a few birds he killed the other day. I'm gonna have to try this

I’m going to have to try that also.
Thanks for posting it ;-)

Nice!!!!

.....and, as everyone knows. especially @dazzo , it's good practice to "relax your chicken" prior to deboning.....

Chef Pepin is the master of deboning chicken and probably the master of chicken in general.  Chef Yan does it with such ease.  That video he says he practiced the night before in his hotel room with a few chickens lol imagine what housekeeping thought!
