Recent cook for retirement party at work....

A friend recently retired and requested pulled pork; two 6-pound shoulders:



I was about 6 hours in, concerned that the bark getting too dark and worried that the Royal Oak lump and apple/cherry wood would over-smoke the meat.  Turned out I was worried for nothing because the crispy, crunchy bark mixed with the succulent inside blew everyone away, including a Memphis transplant!

Yeah, when you mix it all up it's not a big deal.....bark adds in a bunch of flavor........ ;D

Wow that looks great. I guess I need to do a butt or a brisket on a kettle some time.
