Skin on over direct heat? I haven't seen steelhead at our local grocery store. Costco?

Yes. Bottom vents half. It was at sams. I hadn't seen it either until now. I always do salmon the same way. I only buy it if it has the skin on. The skin protects from direct heat and the layer of fat keeps it moist. A little olive oil, kosher salt, pepper, and a dusting of old bay is what I normally do. I also add a chunk of wood to the coals. Apple this time.

@HoosierKettle those look grate I love doing skin down direct like you said it holds the moisture skin is crispy beautiful cook and grill. Did you have the pup standing by in case it turned into dog food ? LOL
Seeking a Black Sequoia I know I know, I'd settle for just the tabbed no leg grill
