I'm making pulled pork for a tailgate this weekend (go Hokies!). I wanted to change things up a little and try a finishing sauce on 1/2 of the pork. Does anyone have a recipe that they would be willing to share?

Thanks!

I absolutely love finishing sauce and use a little every time. A little goes a long way imo so add it in a little at a time. I'll find the recipe I use and post it.

This is what I use. This is a screenshot of the recipe from another forum. Coincidentally it's one of the first things that pulls up on google. That's how I found it years ago. This is the basis for what I do. I usually cut out the red pepper flake and sometimes I'll add a little water to cut the vinegar.

I forgot. I've actually been using this recipe lately. Both are similar but I much prefer this one. This recipe calls for a healthy amount of cayenne so I usually cut that in half

As you can probably tell, I do love me some finishing sauce. It's best when nobody can tell you added anything but all say it's the best

As far as a personal taste thing, for me, the vinegar based stuff is a little sharp-edged......it's good, but just a bit sharp-edged.............

One thing I've found that adds to PP well, but doesn't overpower it is mojo sauce / marinade ~~>

Are you talking about your vinegar sauce?  I've used it as a finishing sauce and it is fantastic as well. I forgot I had it. I'll have to make a butt this weekend.

I usually serve my vinegar sauce on the side, and my BBQ sauce on the side as well. Choices for the audience.  Here's my vinegar sauce:

1 cup cider vinegar
2 tbs brown sugar
1 tsp cajun seasoning
1 tsp coarse black pepper
1 tsp red pepper flakes
1 tsp kosher or sea salt
1 tsp hot sauce (I like Secret Aardvark)

Warm the vinegar enough to dissolve the sugar, add/whisk in the remaining ingredients and mix thoroughly.

Of course, you can raise or lower ingredient levels to your taste.

Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

Big Dawg

Yeah, all of these are versions of Eastern (NC) BBQ Sauce, as opposed to Lexington style, which starts out along the same lines but then add ketchup.

If you want to bring the heat, try Scott's.
