Easy Street Tacos

Corn Tortilla
Pulled Pork
Diced Onion
Chopped Cilantro
Grated Cheese
Diced Tomato
Fire Roasted Salsa







Other than the time involved, this cook was pretty easy and straightforward. 3x2 Stubb's snake, with peach and cherry wood for smoke. I used Stubb's "BBQ" dry rub on the 7# pork shoulder. 7-hours at 275*ish and it was done. I did this cook on my 26. I started the snake with 12-lit briquettes. The ashed over stuff in the pic, are leftovers from a previous cook.

I don't know on what streets you are buying tacos, but those look good. Nice job.

And Hey! You changed things up; You started with the plate, then the cookup, then the kettle setup. It's typically the reverse of that here. I think I kinda like starting things off with a big plate of more food than I need.

I agree with Jon about switching up the photo arrangement.
Tacos, as always, look killer. I bet that fire roasted salsa really added some great depth to that bite.
How much coal did you have left running a 3x2 on your 26r?

Yes, the fire roasted salsa is a necessity!

I burned through that entire snake and actually had to add a small chimney's worth to finish it. I would normally use my JJ, with CB stacker, for just one shoulder, but wanted to burn more wood on this cook. I didn't wrap it at any time either. The fire burned clean the entire time too. Happy with the results for sure.
