I've seen, and cooked, scrambled eggs a lot of different ways in my life.  This is the first time I've seen them done in a saucepan.  They sort of looked more like mashed potatoes than eggs to me, but I do plan on giving this method a try.

"Why do you have so many bbq's?"....."I just like lookin' at em' sometimes....and I have enough purses and shoes"

I'd try it once but they look undercooked for my wife. She probably wouldn't eat those.

I would have a very hard time calling those scrambled eggs. Not in Indiana anyway.

Trick is sourcing the creme fraiche.

Good ol sour cream  was my substitute.

I didn't look at what the other thing is but you have my attention with sour cream. I'd put that on everything if I could. I will give this a spin. Thanks for sharing it.

I get it.  How can you put a new spin on scrambled eggs?  Just try it.  It may look under cooked but it's not.  Just a bit creamy.  I'll still use my bacon grease when I don't want to get fancy.

looks fantastic.
i use a similar technique for my scramble and my omelets. I learned it from Adam Savage

There is a great book by Michael Ruhlman on eggs. It is really interesting. It talks about the various ways to cook eggs and the various forms. Ruhlman has a lot of great books worth looking at.

My family likes scrambled done differently......heat a pat of butter with a drip of olive oil in the pan, crack eggs and dump in (generally 3 per person) cook on low heat till the white is getting solid.  Then break the yolks and stir it all so that you have yellow and white eggs.  When it reaches the almost dry stage, add a couple slices of cheese (American for my guys) gently mix and plate.  Salt is already in the cheese, so just add pepper. Very moist eggs.

Interesting technique. I'm gonna give it a try.

I made these this morning. I hate to admit it, but these were the best scrambled eggs I have ever made. I used sour cream like you.

It's a fantastic method for scrambled eggs. I encourage trying it.

I made these while making head to head sausage gravy. I used jimmy dean in one pan and Tennessee pride in the other. After a vote, jimmy dean is moving on to next weeks round and will face off against bob Evans. That will leave that winner against old folks the following week. Any other sausage brands you guys use that I can enter my contest?
