I think I'm making it as big as possible without it toppling over. About 2x2+1 on top and wood chunks.

Its for sure long enough I just think it only lights a few coals at a time so 6-8ish coals at any given time only generate so much heat...(a theory anyway).

I don't see how it is possible to cook ribs so long. Longest I've done ribs was in the wsm using the 3-2-1 method. Driest, worst ribs I've ever had. I went back to hot and fast which is how I've always done them.

That's not a criticism of the low and slow method but just genuinely not understanding.

Mine were not dry at all. I did use a water pan, that might be a factor.

Sure..no problems. You can also flip the cookin grate upside down to give you super easy access to the baskets.

Just let them hang open....very nice! I'll only have the lid off for 20 seconds.  8)
Don't even need to remove the lid. Only slight lift and slide over enough to add coals so you keep most of your heat under the lid.

If I can do them in 3 hours at 350 and they come out the same as 6+ hours at 225ish I'll switch to hot and fast.

I'm mainly just copying stuff I'm seeing on forums and YouTube. I'm not attached to slow I just thought it was the standard way..

Slow n sear is the way to go I reckon, I did 4 racks (2 on wsm and 2 on the kettle) wsm cooked  a bit slower at just under 5 hrs, great ribs though and slow n sear was done at about 4hrs and held a solid 250f.
