Carbon steel doesn't contain the ingredients to make it stainless.

That wok ring is available at asian grocery stores for $2-3 for those of you interested.

All steels contain carbon. The addition of nickel (and other elements) beyond a certain percentage makes it stainless.

@greenweb , that "lacquer" will burn off, its just an oily coat to inhibit rust during shipping and sitting in a warehouse... once you get that bad boy HOT it is ready for food!.. have fun. All this talk makes me want to do stir fry for dinner.

Did the original coolie pan have brackets like the larger woks for the 22/18's?
I'm only 2 or 3 kettles away from being that creepy guy down the street with all the Webers

I am in the same boat. 

Could we get some dimensions of the original coolie pans?  What's the diameter, how far down from the rim are the brackets, etc.

@greenweb just use dishwashing soap and a stainless steel scrub pad then season it with flaxseed oil and you are good to go, stir fry on the grill is great
