First time cooking low and slow on the performer. Snake method with a hickory and apple. I am cooking beef ribs on the performer and a brisket flat on the wsm 14.

Thanks. I had kicked around building some kind of cart for the WSM, then I snagged this performer off craigslist for $60. Works great for moving it around.

Salt and pepper on the brisket and added garlic/onion/chili power on the ribs.
The ribs weren't as meaty as I would have liked. It's ok, this was more of a practice with low and slow on the kettle.
