Author Topic: Marinated Thai chicken kelbabs and grilled pineaple (RECIPE)  (Read 1274 times)

Cooked some marinated chicken kebabs using boneless skinless thighs.  The marinade is a little bit fussy but it's definitely worth it.

1/3 cup chopped fresh basil
1⁄3 cup chopped fresh coriander (cilantro)
1  tablespoon minced ginger
1  tablespoon minced garlic (Use fresh garlic!)
1  tablespoon minced chili (I used a serrano pepper)
1 1⁄2 tablespoons soy sauce
1 1⁄2 tablespoons fish sauce
1 1⁄2 tablespoons olive oil
1 1⁄2 tablespoons brown sugar

Mix all ingredients together and marinate the chicken for about an hour.  String the kebobs and cook.  It's just loaded with flavor.

I also grilled some fresh pineapple chunks with brown sugar on my SJ.  Cooked them at the same time I was cooking the kebabs.  They turned out soft and wonderfully sweet.  We ate them for dessert.

BTW all was cooked using RO lump.

Fantastic looking food and photos Dave! Grilled pineapple looks like it candied up just right too... very nice job!

Awesome looking food and a grate recipe. My wife does a marinade just like that but adds the zest of one lime to the marinade and the juice it helps to tenderize the chicken and adds another layer of flavor @Davescprktl

Thanks guys!  I figured since a recipe thread really won't work out I included the ingredients in this post.  Maybe we all can all start a recipe trend!
