I found myself outside, gravitating toward the grills, with a desire to burn some animal flesh. Hmmmm... what to do. Went freezer diving. Ahhh, bone in pork chops. Love these buggers. Bingo.

Seasoned them up with Mad Hunky General Purpose Rub and Tatonka Dust. Damn, what a flavor. Let them sit in the fridge for a couple hours:



CopperTop got the call with RO lump and the Vortex in charge:



Here they are almost finished. I took them to 155-160-ish. Notice the aluminum balls at the base of the Vortex. Those are whole Yukon Gold taters wrapped up with butter, salt and pepper. Put them on ahead of the chops... they had a total cook thyme of an hour:



And now, CopperTop is sporting new bling (thanks again zav):

Those handles look really cool on that copper. Great looking pork chops and cook. I'll have to try some wrapped potatoes around my Vortex bottom sometime.
