Comfort Food
« on: April 02, 2013, 07:32:15 PM »
I had a craving for some roast and some twice-baked potatoes. I cooked a butt roast on the Warrior (sorry, no pics of it cooking, I forgot). Anyways, I did it at indirect at 350 for about an hour and 20 minutes. Cooked to an internal temp of 165-170 degrees. I wrapped the twice bakes in foil and cooked them on the kettle for about 30 minutes. Threw in some Brown 'N Serve rolls and some asparagus and, it was a meal! I used a local rub for the roast, it was excellent! Somehow, the I also forgot to take pics of the asparagus...  ::)

Wow Craig that looks great. The "twice-baked" are a good idea I haven't made those yet. Now I'm going to have to try them.
