This is after 45min on the Mac and cheese and 25 minutes on the wings. Wings will need a bit longer as expected on the mbh.

I change it up but it's basically a half stick of butter, a tiny bit of flour, a large metal spoon full of mayo and sour cream, a couple cups of milk, a little bit of Tony's seasoning and franks red hot.  I get all that going in a large sauce pan and today I graded 1.5 lbs of sharp cheddar and added a couple small bags of shredded cheese. Whatever I had in the fridge. Stir the cheese in and add additional milk as necessary then add macaroni noodles that I previously cooked aldente. Then stick it in the cast iron and cook.

Mac n cheese takes 45 minutes to an hour uncovered on a hot indirect grill to achieve the color and texture on top.

I used hickory chunks.

Not as much as you might think. It was cold and windy so that's probably why.
