Friday seemed like a good day for some good old comfort food. I used this recipe
http://www.weber.com/weber-nation/blog/grilled-meatloaf-for-dinneradjusting the ingredients for 2.25 lbs ground chuck and 1.25 lbs ground pork and I used plain breadcrumbs instead of crackers(less salt). I added 1 diced green pepper along with the onion and saute'd together.
Made some roasted garlic mashed potatoes and homemade mushroom gravy. Added a can of corn to complete the plate. *I didn't do the bbq sauce in the recipe opting for gravy instead.
Into a preheated cast iron roasting pan (to save the dripping for my gravy) and cooked indirect @350ish with a couple chunks of hickory for smoke
An hour and 20 minutes later (155* internal) and off to rest
