Bacon wrapped tenderloin
« on: September 03, 2016, 02:58:31 PM »
Pork tenderloin stuffed with Bacon sausage, cheddar cheese, rubbed and wrapped in bacon.

No bacon weave this time.
Was in a rush.
Decided to detail the Genesis gasser and lost track of time.

Looks good Kneab. Do you like to sear at all on this cook or keep it indirect the whole time? Diggin that redhead ssp too!

I left it on about an hour and a half. Indirect heat the whole cook. Just picked them up once and rotated halfway through. Bacon came out good, one tenderloin was a little smaller and ended up over cooked but still edible. Was expecting one big tenderloin in the package but it was two smaller ones. Next time I will pay a little more attention at the store and kettleside.

Looks good to me!  Did you butterfly the tenderloin to stuff it or just make a slit with a lone knife then shove the sausages in there?

Slit it from the end with a 7.5" filet knife.
