Tailgate Help - Charcoal not permitted!

Hi guys,

My Uncle from NY is coming down for a visit to take in the PSU/OSU game.  My mom wants me to do a bunch of appetizers/food for the tailgate to make it nice for my Uncle.  The problem is that PSU doesn't allow the use of charcoal grills for tailgating.  Crazy, but true.  I plan on doing pulled pork, and I don't have any concerns about that.  I cook it ahead of time, vacuum seal it, reheat the day of the game, no problem.

Are there any other appetizers or entrees you can think of that would be relatively easy to reheat and transport to the game?  I have a Weber BabyQ so I do have access to heat, but no kettles.  My mom has some sort of item that keeps food hot for awhile, but I'd think things would get mushy sitting in a warmer of some sorts.

Basically, I'm looking for ways to reheat BBQ food on a BabyQ, or things I can make ahead of time and take to the tailgate in a warmer.

You can always do the classic Italian sausages and peppers and onions. I pre cook the sausages then I stick a foil pan with peppers and onions on the heat on the little gas grill and put the sausages on when the peppers are about done to get some grill marks than throw them in with the peppers and keep the grill on low.

Cooked, held & re-reated 'Turds a bunch of times.....







Several things I've noticed...

Cook longer & lower heat so they seal up well....

Vent, or allow to cool down slowly, so the "finished seal up" doesn't get mushed out from heat/steam in the holding tank....

And, heat back up as gently as you can so they're less likely to break up...

The last photo is Buffalo chicken meatballs (beef's good also) wrapped in bacon....from a frozen store bought product......real good & quick to fix.....you can sauce in-pan & let those steam out with no ill effects.....

Good luck! the mushrooms are very easy to do. I would do the sausage mix and then at the event do the mushrooms and stuff and top! If you do them let me know what you think.

To keep your pre-cooked items warm while transporting, pre-warm a cooler with hot water.  After emptying out the water, line the bottom of the cooler with an old towel.  Put your items in disposable aluminum pans,wrapped in foil, in the cooler and cover with another old towel.  This will keep them warm for several hours.  You can then put on the grill to warm them back up.  I have done this several times for football games and it works well.

One thing to remember, make sure the drain is closed. Ask me how I know.
