Quick weeknight pies

My kids like bacon, so pre cooking some bacon.  Top thermometer at 500F with just charcoal.


Homemade dough and Barilla sauce ready to go

Veggies


Baking steel on bottom, small pizza stone riding up top to radiate some heat.  Throw on some oak and the thermometer needle gets buried. 




Pies ready to launch.  Heirloom tomato, red pepper, red onion, basil, plus bacon on one slice. Cheese, pepperoni, and bacon.





Pies in then out.






I love my kettlepizza.

Nice pies! Have you tried the stone on the bottom and the steel on top to get more radiant heat down on top of your pies?

@Nate I've done it both ways plus steel on top and bottom with my second baking steel.  My second baking steel is 30lbs and takes a while to heat up, so I don't use it unless I plan on cooking more than 2 pies.
