Blackberry Bourbon Mint Julep

Blackerry Bourbon Mint Julep
1 1/4 cups blackberries
1/4 cup superfine sugar
1/2 Tsp vanilla extract
1 cup plus 4 TBSP Bourbon
1 bunch fresh mint leaves
shaved or crushed ice
club soda

Mash the blackberries, sugar and vanilla in a small bowl and let sit at room temp for 20 mins until juicy. Strain mixture through a fine seive pressing against solids to get get as much juice as possible. Discard solids.

Put 2 TBSP of blackberry juice and 1 TBSP if bourbon in to a mint julep cup or rocks glass, add 8 mint leaves and muddle gently.

Add ice into cup half way, add mint sprig, fill cup with ice the rest of the way. Pour 1/4 cup of bourbon over ice, add club soda to fill glass.

This will make 4 drinks. It is kind of involved but WAYYYYYY worth it!! I like to stir this up and drink it throught a straw. My lovely bride likes to sip the bourbon from the top and let all the flavors mix. Shes a bourbon gal, what can I say.
