Set up the smoker while I prepped the butt at 5:40AM





Rubbed with EVOO and Paul Prudhomme Rub





Hits the smoker at 6:22AM


She's been running between 264 and 300 degrees.

Update

Smoker has been running between 264 and 300.

Did not check the lid til 11:06, she's looking niiiiice

She has stalled at 167 internal for about an hour or so.  Gonna spritz her and open the vents a little, temps have settled in at grate level at 250

I never thought of that.  It usually rests on the work table but I needed a place to kick up my heels while drinking my beer. 
Seemed to work out just fine and when I pulled it off I didn't notice the back being too hot.

At 2:00PM she got double wrapped in foil and transported to the house where the oven was preheated for 275.

Temps started to climb slowly and at 4:15PM she hit 203 internal.  A ten hour session!  Wrapped the butt in a towel and placed it in a cooler to rest for an hour.

When we unwrapped her at 5:15PM the results were worth the wait-


Nephew BJ and BIL Barry as well as The Kimberley's came over to enjoy some wings and pulled pork.

It was a Sweet Baby Ray's kinda day-

I haven't seen that mustard sauce, I'll have to look for it.

@G19 I may be wrong but that looks like what's normally called "Carolina" BBQ sauce, which is mustard-based yellow stuff popular in the Carolinas. I'd also widen your search for "Carolina" while browsing the sauce aisle at the store. Now, I can't say if that's the eastern N. Carolina variety for example, but exploration is what makes it fun.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch
