I'm allergic to poultry. However, I enjoy cooking chicken for the family every now and then. Couldn't resist whole chicken for 59 cents a pound. So, I spatchcocked it, and made a pork loin for myself along with a few potatoes.
Seasoned with salt/pepper/garlic powder and applewood smoked.
Leftovers will go into tacos tonight and pork will be used for Cuban sandwiches on Wednesday.
