New use for charcoal rails
« on: February 26, 2013, 09:40:16 AM »
Don't know if anyone has heard of doing this, but i read about doing this on BBQ Brethern.  What they did was put the charcoal rails towards the center, then put a spare charcoal grate on the rails and then put your coals on that.  From what i understand it brings the coals closer to the grate possibly for searing and such, any way i thought it was a good idea.
Wanted: 18" Platinum any color will work

I am planning to try jacking up a pair of standard charcoal baskets on a pair of bricks to do some steaks. I'm sure it's been done, but it will be new to me. I'll try to remember to photograph the carnage.

....................Or, load some lit coal in the small end of a charcoal starter chimney, set upside down, grate on top & hyper-sear your steaks....... 8)

Or This ~~~>
(from Knuckleheads BBQ)

Fire off a chimney full of hardlump, set it on a grill while it is burning off, once the coals are white, take a hair dryer and blow all of the loose ash away, lift the starter up, place the steak on the grill and set the chimney over the steak and let it sear for 1 minute, lift chimney, flip steak, set chimney back over steak and sear for one more minute. That will give you a nice medium rare, put on a plate and put it in a warm (140-150 deg) oven while you are cooking additional steaks.

There is nothing like a steak seared at 1000 + degrees.

Or, the longer (dry-aged) version by Alton brown.......

Ron, I picked up that tip somewhere this summer, and use it all the time.  Especially for searing steaks and stuff like that.  I also like to use it for thin pieces of fish, as the cooking grate gets really hot, then I oil the grate with a rag and the fish cooks quick without sticking.  And that's my go-to for cooking corn on the cob:  no soaking, just dry ears with full husks right on the heat until the outer husk turns black.

My friend adapted the idea by turning his stamped-metal baskets upside down, then putting coals on the bottom of the baskets to sear filet mignons.  The baskets are quite a bit taller, so the coals are even closer.
One of the charcoal people.
