My Wife & Kids surprised me With a vortex for Christmas,I'm planing on breaking it in tomorrow with some chicken wings.My question is how to set the Vents,I usually run my bottom vents wide open &
control the temp I want for long cooks with the top Vent. Any pointers would be appreciated  ;)

the vortex is great for wings. get a full chimney going and dump into the vortex narrow side up. keep all vents wide open.  once the grate has heated up(10min or so), put the wings on in a circle around the vortex. about 10 minutes before pulling, baste the wings in sauce of choice. let them rest for a couple minutes before serving(if using a post cook sauce, now is the time to coat the wings). if you want a texture similar to fried wings, coat them in flour before placing them on the grill.

Thank you for the pointers I didn't get around too grilling soon enough today no charcoal Plus it gets dark a lot sooner I'll try again tomorrow
