Smoking malt for smoked porter
« on: August 16, 2015, 03:08:41 PM »
4lbs of IdaPils malt over cherry wood for a smoked porter I'm brewing tomorrow.   I wish i had a coffee roaster or something to keep turning it.  Im mixing it by hand.

Let us know how it works out. I've used peat smoked malt, but I only needed a very small fraction of it for the overall grain bill. I'll have to go back and look at my journal, but off the top of my head it was only 10% maybe? Peat is a pretty strong flavor, though.

A little bit of peat smoke goes a long way.   A touch in a strong scotch ale is nice..

I usually use rauch malt for this beer.....50% with marris otter, roasted barley, black patent, and crystal.

Here's my not so elaborate set-up a few weeks ago lautering and sparging.

Quick update.  This beer is kegged, carbed, and turned out great.  I'll be serving it at the ArborMeister Beer festival here in St. louis this Saturday. If anyone is in the area, come check it out.

That's awesome!
I live in "Beer City U.S.A." Asheville, NC, we have a ton of breweries, and more open all the time. But there is a local brewery that smokes their hops in one of the local BBQ joint's pits and it's awesome how you instantly recognize the flavor in the beer.
