Wednesday Night Fajitas

Got to fire up my 2 go-to cookers today for some Fajitas. One had the Gourmet System Wok setup in use and the other was used to grill the chicken.







Here's tonight's ingredients list: 9 Boneless Skinless Chicken Thighs, 8 Jumbo Prawns (in Tiger Sauce), 1 Cup Uncle Benz Spanish Style Rice, Onion, Red and Green Peppers, Mushrooms, Corn on the Cob, Jalapeno Cheese Tortilla's and Habanero Heat Cheese. Chicken and Rib Rub and Peri Peri rub was used to season the chicken.



Thighs were dusted with Chicken & Rib Rub then covered and refrigerated for 45 min.



This turns the rub into more of a glaze and allows the dusting of Peri Peri to stick nicely...off to the grill!



Prep station #1:



Both performers a rockin'...

Fresh grilled corn cut from the cob:



Mix in along with the rice:



Here is the chicken ready to be sliced into strips:



Everything into the wok and mix!



Next proceed to load up a warm tortilla with cheese and the fajita mixture. I opted to add some mild taco sauce to it as well.



And finally it's chow time!



The food was a hit and thankfully we have a bunch of leftovers for tomorrow 8)

Great looking Fajitas! Great looking kettles. How do you keep them so clean? Ain't nobody got time for that...

Matt I love Fajitas nice job on the cook and your layout of this page with prep then cooking is very helpful.

Oh wow totally got that one backwards, Matt. Shoulda run the wok on the Grass Green and cooked the chicken on the Copper. Oh well, better luck next time. Food didn't taste just a little off?

Nice cook and very inspiring! I wish I could take photos that good. I keep telling myself I'm going to photo my next cook but for some odd reason I never get around to it. Too lazy I guess plus I'm just not that good at it.

Once it's cleaned right up it is then pretty easy to maintain. A quick shot of the weber exterior cleaner and a wipe with a microfiber towel before and after grilling and that's it. The performers do all live under covers as well :)

You're not going to get any better without trying! Plus food and grills are extremely cooperative subjects 8) Have some fun with it and snap a bunch of shots and pick out the best ones!

Damn fine cook! I'm glad I'm not the only one who noticed how clean your grills are. Wipe them with a microfiber cloth before and after...hmmm good idea, except I'm kinda thinking of using a diaper! 😀
