Ohhhh......those ribs look to be on the way to just right !!!!

Might just be…the best ribs I've ever made…or eaten! One rack I left dry, the other slathered with this stuff, then put back open on the smoker for another 30 or so.

Just two of us tonight, (love when that happens) so plenty of leftovers to enjoy over and over again.

We didn't even finish the Red Brothers rack. That stuff is amazing!
Of course, I had to wash it down with something:

Perfect weather, perfect ribs. Nice way to wind up the weekend. Thanks for tagging along.

For me, it is a major league improvement. I noted very little smoke anywhere around the door - something I saw a lot of with the OEM door. The door goes in and out flawlessly in a second, and the latch is super secure. The OEM door took much longer to get set in the opening, and the latch was fussy. YMMV.

Also, the new charcoal ring is bigger, and the grate sits down it it. Probably adds another couple hours worth of charcoal. I didn't need the full capacity today, but I can see here that would come in handy. Of course, being stainless steel is another plus.

Did 4 racks of baby backs and 2 racks of spares. I tried the 3-2-1 method using trigg's recipe on some spares. They were fantastic.



Loin backs were also tasty


And the 26 simmering baked beans from scratch all afternoon.



Beautiful day for cooking outdoors!
