That's what I did with my mini UDS using a SJ cooking grate.  That is a SS bowl that I usually line with foil when cooking.

Here is the charcoal basket.
From the top of the basket (not the handle), it is 4-5 inches to the "diffuser" grate.

On a 18" WSM there is about 6" from the top of the coal ring to the bottom of the water pan.
You can't always get what you want....but if you try sometimes you get what you need
