Found Another Good One from awhile ago.........

OK, time to start cooking on Sat nite...
Wanted to get some rich, heavy smoke flavor, so I dug around in the box
& found the black walnut chunks, cut up awhile ago...
 

 
this stuff produces a really nice taste, but it's pretty old so a lot can be used & it still won't go overboard...
 

 
I love fire
 in the "Dark Hours"
 

 
This is Ma & Pa Kettle, Bob on the left (he's from the 70's, I think)
& Mae Belle, on the right ( she's a bit younger)
They never fail to deliver !!
 



While that's going on, time to fix up the rest of the stuff...
A local grocery chain made an import deal with a farm on the faraway continent of New Mexico
& got a limited engagement batch of Hatch chiles...
So i figger why not load em up with good stuff & smoke em
Sausage & string cheese for some...
 

 
Sausage & cream cheese for others.....
Long as I'm smearin' cream cheese around, worked on my cr Cheese troweling technique...
 

 
Pastrami & Swiss fattys...
 

 
Got some shuteye & when the dawgs woke me up to "Check the BBQ", we're burned thru,
except for a few bits of that hard-a$$ed black walnut..
 

 
Butts are not quite there, so doubled them up & used the tail end of the coal to start ribs...
 

 
 

 
Got the flat cooler & towels for hot holding out & the pups were so tired from stayin' up late w/ dad,
Bruno flopped down & took a nap...
 

 
Got the "Macgyver Upper Deck Smoking Rack ( with flip-up feature) set up for fattys & Hatch 'turds...
 

 
Crazy wine soaked oak chips again..
8 AM, need to be mostly wrapped up by 10:30...
 

 
Roll on the deep fried tater salad stuff, mostly done by 9AM...
 

 

 
Pull & pan the 'turds...
 

 
Wrap fattys....
 

 
Ribs are
close, so wrap pork while they finish...
 

 

 
Over to my friends with the big backyard & grilled zucchini
& the professional "Betty Crocker" zucchini tongs.....
 

 
Deep fried & two other kinds of tater salad fruit, slaw etc....

A few tri-tips & the ribs just before they were gone...
 

 
that's it for the pork...
 

 
Nobody brought cake & ice cream....
Shoulda made dessert 'turds...
