Chicken Lollipops and Stuffed Peppers
« on: April 21, 2015, 04:53:41 AM »
My family has really been into the bacon wrapped stuffed peppers so I whipped up a quick batch. I also took my first shot at chicken lollipops. They took a little longer then expected but turned out well.

fired up my Tumbleweed Texstyles TX BBQ Mini

Thanks for looking!

Clever! Gotta tray that. For some reason I never considered regular cheese in the peppers.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

in my opinion to much cream cheese is not the best. I get shredded pepperjack and or mozzarella. You really have to pack the cheese in the peppers. When the shredded cheese melts its shrinks because there is more air pockets compared to cream cheese. If you don't stuff the peppers you get a half empty pepper which stinks!

Chicken Lolli-pops are a lot of fun to make, but a lot of work too as you found out.  You gotta have a sharp nice to cut those tendons as well as the bone at the top of the leg to make it stand right.  Do you have a drumstick holder for those?  I've found it to be a helpful tool when cooking drumsticks.

Yeah, I'm with you....half empty peppers stinks !!!

Nice lookin' cookup....both items scream Eat Me !!!

One thing I've done to make cream cheese not so bland or ordinary is add in various spices like tandoori mix

1buckie- that's a solid idea. I have mixed in shredded cheeses in the cream cheese which turned out well. I haven't done this but I really want to make a batch of spinach artichoke dip and stuff that into peppers...

Yep, spinach artichoke will be good.....I've also used a pre-mix artichoke / jalepeno that was good....

Sometimes I like just regular cream cheese, but a little mixed spice or rub type stuff on top of the cheese, then a strip of chicken breast topping that, wrapped....

Those are on top here....

On the bottom are straight cream cheese with cactus honey powder, wrapped in hyper-thin slice ribeye.....

The possibilities are endless......good lookin'' wrap-up you got goin' on there !!!

The cheese w/ Kickin' Chicken would be good....... ;D

Nice! Did you make the lollipops out of wing dummies or chicken legs? Or can both be turned into lollipops?

Austin87-
I made the lollipops out of chicken legs. They are very labor intensive and I don't think the juice would be worth the squeeze on chicken wings... That's a lot of time! Also make sure to have an ultra sharp knife to trim the chicken legs.

1buckie-
What a picture! I am relatively new to the forum but now know you are the resident stuffed pepper exert! Nice looking cook.
