Needed to try a new rub so thighs got the call...no sides just thighs. I was very pleased with the new rub and the red oak combo.
The cooker, banked with bricks.

When I'm done I usually touch the skin over the coals to crisp it up a bit. I like s crispy skin...

Damn I love chicken thighs. They always talk about the oyster as the best part of the bird, but I love them thighs.
